Almost Raw Tiramisu

Happy Valentine’s Day! What better way to treat yourself or someone you love then with a healthy dessert that will blow your socks off! I have been playing with this recipe for a few years, so it’s time that I finally share it. It makes an appearance at most special occasions in my household, because it is everyone’s favourite. I hope you enjoy!

 

Almost Raw Tiramisu

CRUST INGREDIENTS

  • 1 cup walnuts
  • 5 pitted medjool dates (soak them for 10 mins in hot water if they are not soft)
  • 1 teaspoon vanilla extract
  • 2 teaspoons mocha protein powder (I use Vega Protein – you can substitute this with 1-2 tablespoons of strongly brewed coffee/espresso)
  • pinch of sea salt

MOUSSE INGREDIENTS

  • 1 + 1/2 cup cashews
  • 5 pitted medjool dates (soak them for 10 mins in hot water if they are not soft)
  • 3/4 cup coconut cream (refrigerate can of full fat coconut milk overnight – the top will harden into a cream consistency, and the bottom will be liquid – use the top layer)
  • 1 teaspoon vanilla extract
  • pinch of sea salt
  • cacao for dusting

DIRECTIONS

  1. In a food processor, combine crust ingredients and process until ground (and sticky!)
  2. Divide the crust between 6-7 small mason jars (4oz) and press with fingers or spoon until packed at the bottom 1/3 of jars (you can also use silicone molds)
  3. In a high speed blender, combine mousse ingredients and process until smooth
  4. Scoop the mousse on top of the crust
  5. Dust cacao on top
  6. Place in fridge for a few hours to set
